Dulse flakes are dried and crushed leaves of the red algae Palmaria palmata, also known as dulse or sea lettuce flakes. This algae grows in the cold coastal regions of the Atlantic and Pacific Oceans and is traditionally valued in countries like Ireland, Iceland, and Canada. It is known for its intense, salty, oceanic flavor with a slightly nutty undertone.
Nutritional Content:
Dulse flakes are rich in vitamins and minerals, including:
• Vitamin A and C
• Iron
• Calcium
• Magnesium
• Potassium
• Iodine
Due to their high iodine content, dulse flakes should be consumed in moderation to avoid excessive iodine intake. The German Nutrition Society recommends a daily iodine intake of around 200 micrograms for adults. Since dulse flakes can have a high iodine concentration, it’s advisable to adjust portion sizes accordingly.
Culinary Uses:
Dulse flakes are highly versatile and can be used in various dishes:
• Salads and Soups: As a topping or ingredient.
• Smoothies: To add a nutrient boost.
• Seasoning: As a natural salt alternative.
• Snacks: Dried or lightly roasted for a crispy treat.
In vegan cuisine, dulse flakes are popular for their umami flavor and their ability to develop a bacon-like aroma when roasted. For this reason, they are sometimes referred to as “bacon from the sea.
