Prepare the Potato Preheat your oven to 180°C (350°F). Wash the potato thoroughly and prick it with a fork to allow even cooking. Rub it with olive oil, sprinkle a bit of salt and pepper, then wrap in parchment paper followed by aluminum foil. Bake for about 1 hour, or until soft inside. 2. Mash the Potato Once baked, let the potato cool slightly. Gently press the sides to open it and create a pocket.
