Vegan Kumpir with Quinoa and Vegetables

A delicious, healthy, and 100% plant-based twist on the classic baked potato.

📝 Ingredients

  • 1 large potato

  • 1 teaspoon olive oil

  • A pinch of salt and pepper

  • ½ cup cooked quinoa

  • 2 tablespoons cooked red kidney beans

  • 1 tablespoon sweet corn

  • 1 tablespoon tomato sauce

  • Colorful diced peppers (red, green, yellow) – as desired

  • Diced tomatoes

  • Chopped green onions

  • Chopped parsley

  • 2 tablespoons grated Violife vegan mozzarella cheese

  • 1 tablespoon Violife vegan cream cheese

  • Extra salt & pepper to taste


🔥 Preparation Steps

1. Prepare the Potato

  • Preheat your oven to 180°C (350°F).

  • Wash the potato thoroughly and prick it with a fork to allow even cooking.

  • Rub it with olive oil, sprinkle a bit of salt and pepper, then wrap in parchment paper followed by aluminum foil.

  • Bake for about 1 hour, or until soft inside.


2. Prepare the Filling

In a bowl, mix:

  • Cooked quinoa, red kidney beans, sweet corn, tomato sauce,

  • Diced peppers, tomatoes, green onions, and parsley.

  • Season with salt and pepper to your taste.


3. Mash the Potato

  • Once baked, let the potato cool slightly.

  • Gently press the sides to open it and create a pocket.

  • Add:

    • 2 tbsp Violife mozzarella,

    • 1 tbsp Violife cream cheese,

    • A pinch of salt and pepper.

  • Lightly mash the potato and cheese with a fork until blended.


4. Add the Filling

  • Spoon the quinoa-veggie mix into the cheesy potato base.

  • Garnish with fresh parsley.
